Sweet Potato and Pork Chili

40 weeks is a full term pregnancy. Today marks the completion of 40 weeks (280 days) of chili.  While the chili project hasn’t brought me the level of joy that my children have, it has produced more than 21 empty containers of chili powder.  Over 5 pounds of chili powder has been consumed as part of 2014’s chili project- by mass, this roughly approximates Chili Jr’s size at birth.   Eerie.

Ingredients:

 

¾ lb sweet potato, peeled and diced

1 ½ C leftover cubed pork

½ T bacon fat

2 T chili powder

1 T brown sugar

1 t cumin

1 t dried Mexican oregano

1 t onion powder

1 t garlic powder

1 can Ro*tel tomatoes with chili

1 ½ C vegetable juice

Direction:

Simmer ingredients for 1 hour.

Tasting Notes:

 

The household is split on sweet potatoes. Chili Jr. and Pre dislike the orange spuds while the rest of us adore them.  This chili must have gotten it right, as the boys polished off their bowls of chili with reckless abandon.  The pork, bacon fat, and spices helped mitigate (but did not eliminate) the sweet potato flavor.  There was an all-around balance that is sometime lacking in squash/sweet potato dishes.  This rendering of a classic stew crossed the “t” and dotted the “i”, painstakingly making sure every nuanced flavor found a voice.  In this sense, the chili was a huge success.
