Chili Out Chicken Taco

Man is restless by nature. Herein lies his greatest virtue and most tragic fault.  Evidently once one has, but tirelessly striving and endlessly toiling, reached the apex of success, he redoubles his effort to relentlessly tear down that which he has built.  My relationship with the Involuntary Taste Panel is strained.  Maybe tacos will help.

Day 276 (89 remain)

Ingredients:

¾ lb chicken boneless skinless chicken thighs

1 jalapeno, seeded and diced

½ C white onion chopped

1 T chili powder

1 T paprika

1 t garlic pepper seasoning

1 can (4oz) diced mild chilies

1 t balsamic vinegar

Taco shells

Shredded cheese

Sliced tomatoes

Lettuce

Directions:

  1. Fry chicken jalapeno, onion, chili powder, paprika, and garlic pepper until the chicken is cooked through (about 10-12 minutes).
  2. Add chilies and vinegar and simmer for 5 minutes
  3. Serve with taco shells, lettuce, tomatoes, and cheese.

Tasting Notes:

According to Chili Jr. we hit on the optimal ratio of meat to non-meat- somewhere around 65:35. The spiciness of the chili chicken was in clear evidence but it did not wallop.  I’d have to admit that dark meat makes a better taco than does white meat.  Chili does not make a better olive branch.
