Nacho Grandma’s Chili Potato Pancakes.

This is not your grandmother’s potato pancake recipe. If it was, then I’d be your grandmother, forcing what is sure to be an awkward conversation between you and your grandfather.

I’m not of German ancestry but most of my blood relatives are direct descendants of Germans. That said, nothing goes better with a fish fry (or fish sticks) than good old Bavarian potato pancakes.  Hopefully the German’s aren’t too mad that I mangled the recipe.

Ingredients:

1 C shredded Zucchini

3 C shredded raw potato

3 eggs

1 T chili powder

1 t paprika

¼ C + 1 T diced white onion

2 T diced jalapeno

3 T flour

2 T butter.

Directions:

  1. Mix ingredients (except butter in a large mixing bowl.
  2. Melt butter in a pan.
  3. Drop potato/chili mix by heaping spoonful onto buttered pan.
  4. Fry on both sides until pancakes are set.

Tasting Notes:

 Despite the chili infusion, these potato pancakes tasted an awful lot like your grandma’s, which certainly wasn’t my aim and it ended up being terrifically unnerving. The ITP was not pleased and though they deep-sixed any venomous repudiation of the chili potato pancakes, their mangled expressions spoke volumes.

I tried some after-market mods:

Blutwurst: Awful

Ketchup: Good

Hot Sauce: Better

Nacho Cheese Sauce (Spike’s Brand): Excellent.

Sometimes it pays to tinker.
