The stream of consciousness has dangerously swift currents, I just wish that I could resist the temptation to wade in. Today is the 200th consecutive day of chili. While this already would be a momentous occasion, it gets even better. If you know Pre, please send him some hardy congrats. The little man ran his guts out today. Not only did he bring home some serious championship hardware, he qualified for a national 5K in April 2015! Since I am able to read minds (each and every thought, so ponder at your own risk), I know this is what you’re thinking- “Oh oh, the race is next year, how could anyone possibly run well once the year of chili has concluded?” Cogitating on the future is the devil’s playground, so we’ll worry about that race sometime next year. Tonight we are gonna grill, baby, grill.
2 lb boneless, skinless chicken breast tenders
1T Chili powder
1 T taco seasoning
½ T garlic powder
1 t cumin
1 t paprika
1 t seasoned salt
2 T lime juice
- Mix dry seasonings.
- Add lime juice to dry seasonings and mix to form a paste.
- Brush paste on the chicken.
As I am tragically prone to drift into( preciously brief) moments of lucidity, I will offer a reality. While I would like to say that Pre is a chip off the old block, the truth is Pre, like his brother and sister, inherently possess far more guts than I have ever been able to muster. They each deserve a tremendous amount of credit.
The chicken chili? It was terrific. The ITP and guest ITP sounded approval. Citrus+ chili + grilled wonderfulness. Yay.
