December 3rd 2005 will forever be remembered as the day of the great sporking incident. Chili Jr (then 4 years old) tried to remove Pre’s left eye with a plastic “hybrid” utensil. While the motivation for this completely uncharacteristic and entirely impromptu attempt at enucleation remains a mystery, one thing is certain. It was my lightning quick reflexes that prevented some seriously invasive home ophthalmology. Since that day, my style of intervention has trended more proactive. We no longer keep sporks in the house. Additionally, I take pains to hide other sharp objects. The well-honed implements of last night’s chili kabobs have been safely tucked into a hard-to-reach cabinet. That done, today’s focus is on smooth and mellow. Have you even been mellow? Have you never tried? Packing an astounding 280% of your daily allowance of vitamin A pumpkin is a nutrient cluster bomb intent on smoothing you out. Paired with hotdogs, which offer a healthy serving of, uh, um, pink-ish flesh, this chili is certain to please. Perhaps this recipe will pair better with Sno Shoe Grog than did my last squash chili iteration.
1 can (4 0z) mild green chiles
1 can (15 Oz) pumpkin
1 C vegetable juice
½ t garlic powder
½ t coriander
½ t paprika
½ t cumin
3 cardamom pods
1 T chili powder
6 hot dogs, diced
1 can cannellini beans, drained
1) Mix ingredients (except beans) in slow cooker and cook on low for 8 hours.
2) Add beans and cook an additional 10 minutes
3) Serve with macaroni and cheese.
Chili 365, Chili Jr, The Pirate- dutifully ate the chili, did not mutter complaints, did not offer compliments.
Mrs. Chili365- “tried” the chili and was annoyed by the viscosity and seriously spooked by the fact that I slow cooked hotdogs.
Pre- Looked for a way to get out of eating the chili. Went so far as to seek out a spork with which to gouge out his own eye. Silly boy. There’d have been time for him to down a bowl of chili en route to the emergency room.
