The announcement of breakfast fare for an evening meal usually brings with it a palpable excitement. Toss a chili into the “breakfast” mix, and you generate a tangible buzz. This recipe is simple, mostly owing to the use of pre-cooked sausage patties.
Day 116 (yo)
For the chili:
1 package (5.6 oz) of precooked sausage patties, diced (we used Jones brand, but anything substitution would likely suit)
1 large tomato, diced
1 T chili powder
1 t Mural of Flavor (Penzey’s)
For the breakfast portion:
5 hash brown patties, cooked
5 fried eggs
1) Mix chili ingredients in a pot and simmer for 20 minutes.
2) Hide cooked chili between cooked hashbrowns and fried egg.
We may have started a trend with this chili. The ITP wants breakfast of dinner more often. With greater frequency will, undoubtedly, come greater responsibility. That said, and as luck would have it, while enjoying the peek-a-boo breakfast chili both Chili Jr. and Pre confessed that at the outset of 2014 they didn’t care for chili. Now, 116 days in, they are, by their own admission, true chili aficionados. All indications point to a great number of chili breakfasts during the coming weeks. Mrs. Chili 365 and The Pirate both affirmed their love of this recipe. My two cents- it was delicious, and easy to make= big win. As a consequence of yesterday’s holistically satisfying (thanks again Mrs. Chili365) marathon experience, my calf muscles may be sore and there may be some curious contact abrasions on my waist but I’m nothing but smiles. Chili makes it happen.
