Owing to its all-star lineup of ingredients, taco night is to be held in solemn high regard. Poised with competing interests and positioned antagonistically, life (in the biological sense) is marked by its breath-taking beauty, awe-inspiring intricacy, and doggedly stubborn inconvenience. As such, tonight I’m working a double shift and any taco reverence will be intense, but fleeting. I’m churning out chili tacos and I’m back out the door.
1 lb ground beef
1 fresh jalapeno, diced
1/2 C tomato sauce
1T chili powder
1/2 t cumin
1 t Mexican oregano
Brown ground beef, drain off the fat.
Add remaining ingredients and simmer for 10 minutes.

All creatures great and small would enjoy these tacos. The ITP devoured them with great zeal. Here’s a bit of food wisdom from a junior ITP member- “Anytime you want to make a food taste good, make it into a taco.” Indeed a truism, as Mrs. Chili365 totally called me out for (unconsciously) giving my empty plate a big thumbs up. I have but two wishes 1) more tacos (AND a beer- does that count as two?) 2) A life that revolves around tacos, as earth orbits sun.
