Birthday Chili Cornbread with Refried Bean Frosting

The Pets’ birthdays can be a big deal, if you do it right. Today the backyard hens turn 3 years old. In honor of their hatchday, I created a special chili-themed birthday cake.

Top 5 Reasons to keep backyard chickens:

5) Chickens are always happy to see you.

–Maybe it’s because I bring them treats, but no other creature falls all over themselves to greet me quite like the hens do.

4) Chickens are a study in animal social behavior.

–Have you ever worked in a cubical jungle or gone to high school? Similar social stata, folkways, and mores exist in a chicken yard.

3) Chickens are excellent listeners.

Most of the time if you pick up a chicken and speak to her, she’ll lock into something akin to an opium induced trance.

2) Chickens run like little dinosaurs.

–Nature has humorously endowed chickens with a gait kindred to that of T. rex.

1) Chickens lay eggs.

–The ultimate PWB (pets with benefits.)

Ingredients:

Dry Ingredients:

1 C flour
1 C corn meal
½ C cornflakes, crushed
¼ C sugar
2 t chili powder
2 t baking powder
1 t baking soda

Wet ingredients:

¼ C butter, melted
1 C milk
2 eggs
1 (4 oz) can of green chiles
1/3 C black olives diced
1 C shredded cheddar cheese

Frosting ingredients:

1 (16oz) can of refried beans
1 t onion flakes
1 t chili powder

Directions:

1) In a bowl, mix the dry ingredients.
2) In another bowl, mix the wet ingredients.
3) Mix the wet ingredients and dry ingredients together and scoop into a greased pie pan.
4) Bake at 425 C for 25 minutes
5) Mix the frosting ingredients.
6) Frost the cake.

Tasting notes.

Refried bean frosting a curious choice for a celebration cake? Hardly. It is a known fact that refried beans say “Happy Birthday-I Love You” far more eloquently than Hallmark ever could. Somewhere along those lines- the chickens enjoyed this cake far more than I (anxiously, but politely) enjoyed the cake on that occasion my college roommate and I happened into a biker bar and accidentally (unserendipitously) participated in a “Happy Getting Out of Prison” celebration. (A story for another day. Today, we talk chickens.)

With regard to the chili, er, cake- my opinion aligns with that of the hens. I thought the cake was terrific, as did the youngest ITP. Unfortunately the rest of the ITP was not as enthused. Well, if any of my old biker friends brothers are out riding tomorrow morning, they’ll catch a glimpse of the hens and I sharing a chili cake breakfast in the dusky pre-dawn light.
