Tonight, something easy to prepare. To borrow a phrase Bill Clinton liked to use, “It’s the KISS principle- Keep It Simple, Stupid.” A good takeaway, indeed. None-the-less, it’s best not to borrow carte blanche from anyone, including President Clinton. That and I’m certainly not accepting anything gifts from his humidor.
Add to a pot
– 12 oz cooked pork tenderloin, diced fine
– 1 C mild salsa
– ½ C spicy canned carrots
– ½ C vegetable juice
– ½ t cumin
– ½ t paprika
– 1 T chili powder
Simmer on low for 45 minutes
Serve on corn tortillas with cheese
I suppose you saw this coming, with the huge loin of pork I pulled out earlier this week. Pork for dinner tonight. I am glad to report that this easy to make chili turned out quite well (I enjoyed it quite a bit). It garnered a “very, very good” from the ITP. That’s two “verys” -indicating a 4-fold besting of simply “good.” With dinner in the books, I guess the time has come to, ahem, smoke ’em if you got ’em.
