January 6th- Stir Fry with Chili Sauce

Our backyard hens are certifiably nuts.  With the air temperature -17 F and the wind chill registering a jarring -36 F, they are relaxing outside of their coop.  I am concerned that if they aren’t careful, you’ll soon be reading a recipe for chili con pollo.  Fortunately, the hens seem happy and healthy, at least for now.  This is good news for many reasons, not the least of which is that the initial days of 2014 have found us far more carnivorous than is our norm.  That said, it is time to hit the vegetables.

Chili Sauce:

1 T Balsamic vinegar

1 T chili powder

½ t salt

½ t chicken bouillon

1 t sugar

1 t cornstarch

½ C water

In a coffee mug, stir vinegar and chili powder until a smooth paste is formed.

Add remaining dry ingredients and stir.

Add water and stir.

Microwave on high 1 minute.

Stir and microware 1 additional minute.

Serve over steamed vegetables.

I also tried it on Ice cream.  Well, it is really, really interesting – enough said.

NOTE IN PRESS-  Should you decide to stand outside in the aforementioned weather patiently waiting for the aforementioned hens to return to their coop, exercise caution, as your lips can (and as I found out will) freeze to a can of beer.
