January 3, 2013- Breakfast Brat Chili

When life gives you the sausage, make chili.

Birthdays are a time for self-renewal, positive reflection, and, of course, chili.  When you are a newly-minted teen and your dad threatens to feed your overnight guests chili for breakfast, renewal and reflection take a backseat to worry.   I kowtowed and provided a second breakfast option.  For many of our young guests, the store brand pancake mix and fresh fruit proved to be hold more allure than chili.  All but one young soul passed on the chance to start the day the right way- with a bowl o’ red.

Jan 3-B

½ pound of cooked brats- Diced

¼ C diced onion

¼ C diced green pepper

1T chili powder

½ t crushed red pepper

2 t dried Mexican oregano

1 C tomato sauce

For the side:

Warm corn tortillas

Fried egg

Fry diced brats, onion, green pepper, chili powder, and red pepper in a pan until brown.

Add oregano and tomato sauce.

Simmer over medium heat for 10 minutes

Serve over a warm corn tortilla topped with a fried egg.

      The ITP has been good about eating chili. Funny, no one asks me what’s for supper anymore. They seem resigned to their fate. Pictured in the background is a can of Cafe’ Caribe’, the best 10 oz of coffee $2.69 can buy.

      I was able to stop thinking about chili long enough to learn the comment reply function. 13 year olds are fussy when it comes to breakfast. They’ll take frozen waffles over chili- a worrisome sign, as with them lies the future of humanity. I have 340 recipes to go. Hopefully they’ll come around before it is too late.
